Caviar Powder
Dipping Sauce
Ingredients
- 3 tablespoons crème fraiche
- 1 ½ tablespoon caviar powder
- 1 teaspoon lemon juice
- ¼ teaspoon finely chopped shallots
- ½ teaspoon finely chopped chives
- ¼ teaspoon granulated onion
- Salt & pepper to taste
Directions
Place all ingredients in a mixing bowl except the salt and pepper. Gently stir the mix with a spoon until all ingredients are well combined; add salt and pepper to taste.
Use immediately or refrigerate for a day. Served best with raw or blanch vegetables, bread, or noodles. Compliments many other dishes- use your imagination!

Citrus Salad and
Caviar Powder
Ingredients
- 5 ounces frisee salad
- 5 ounces baby arugula
- 6 wedges orange (supreme)
- 5 wedges ruby grape fruit (supreme)
- 1 tablespoon caviar powder
- 2 tablespoon orange champagne dressing
- Salt and black pepper to taste
Directions
Combine the frisee salad and baby arugula in a bowl. Add Champagne Orange dressing (see below) along with the citrus. Add fresh black pepper and salt (optional). On a large plate, place the greens in the center. Supreme an orange and grape fruit and decorate around the edges of the salad. For the final touch, grind Caviar Powder on top of the dish. Enjoy!

Orange Dressing
Ingredients
- 3 tablespoons fresh orange juice
- 1 tablespoon champagne vinegar
- ½ teaspoon Dijon mustard
- ¼ teaspoon finely chopped shallots
- ½ cup grape seed oil
- Salt and pepper (optional)
Directions
In a small bowl, combine orange juice, vinegar mustard, and shallots. Slowly add the oil, whisking at the same time until well mixed. Add salt and pepper.

Lobster and Ossetra
Caviar Risotto with
Caviar Powder
Ingredients for 5 servings
- 1 cup carnaroli rice (short grain rice)
- 6 tablespoons unsalted butter
- ½ cup finely chopped Spanish onion
- 1 finely chopped garlic clove
- ½ teaspoon fresh thyme leaves
- 4 ounces large dice lobster meat
- 1 cup white dry white wine
- ½ cup lobster or chicken stock
- ½ cup parmesan cheese
- Salt and black pepper to taste
- 50 grams Ossetra Caviar
- 2 tablespoon finely chopped chives
- 15 grams Caviar Powder®
Directions
In a heavy medium sized pan melt 2 tablespoon of the butter, add garlic and onions sweat until translucent. Add the rice and thyme leaves. Cook for 5 minutes stirring every 2 minutes with a wooden spoon. Add half of the lobster meat and white wine, cook until the white wine has evaporated. Turn the heat to low adding the lobster stock a little at a time. Continue stirring until liquid has absorbed. Add the rest of the lobster and butter, stir for 1 minute and add parmesan cheese.
